Ennula-Campana-roots Preserved.

Wash them, and scrape them very clean, and cut them thin to the pith, the length of your little finger; and as you cut them, put them in water, and let them lye there thirty days, shifting them twice every day, to take away the bitterness; then weigh them, and to every pound of Roots | | 190 add twelve Ounces of Sugar, clarified first, boiling the Roots very tender, then put them into this Sugar, and let them boil upon a gentle fire until they be enough; having stood a good while off the fire, put them up between hot and cold.
