Cherries Preserved.

Take Cherries fully ripe, and newly gather'd, put them to the bottom of your Preserving- pan, let the Cherries and Sugar be of equal weight, then throw some Sugar on the Cherries, and set them over a quick fire; and as they boil, throw on the rest of the Sugar till the Syrrup be thick enough; then take them out and put them into a Gally-pot whilst they are warm; it will not be amiss to add two or three spoonfuls of Rose-water to them.
