Neats-tongues Stewed.

Take a Tongue & put it a-stewing between two Dishes, being raw and fresh, put some strong broth and White-wine to it, with some whole Cloves, Mace, and whole Pepper, some Capers, Salt, with Roots, as Carrots or Turnips, and stew them all together leisurely the space of two hours or more; then blanch it, and put some Marrow to it, give it a walm or two, then Serve it on Sippets finely carved, and strew on some minced Lemon, Barberries or Grapes and run it over with beaten Butter: Garnish your Dish with Manchets finely searced.
